french toast with blueberry compote and cream cheese whipped cream

Hello french toast!  This recipe is coming at ya from my sister Jordyn!  She thought it would be a fun combination of flavours, and cooked up this delicious masterpiece....I just taste-tested and took the photos.  Ha!

She was intrigued by the idea of cream cheese whipped cream, so she gave it a go....and I must say that it gets two thumbs way up!  It's such an interesting twist on a classic flavour, and definitely makes this french toast extra special.  Add in a blueberry compote, and voila!  Breakfast is served.

Also, I had no idea that the secret to getting the very best french toast is....flour!  Adding a bit of flour to your egg mixture helps it create almost a batter that gives you thicker, fluffier french toast.  So dang good.


French toast with blueberry compote & cream cheese whipped cream

serves: 4-6



Directions:

1)  The best french toast is made with dry bread, so the slices don't get super soggy when you dip it in your egg mixture and fall apart.  Often we will buy a fresh loaf, slice it, and then let it dry out the day before making french toast.

2)  In  medium bowl, whisk together the milk and egg.

3)  Slowly add the flour.

4)  Add in the sugar, salt, cinnamon and vanilla extract.

5)  Dip bread slices into the egg mixture until saturated.

6)  Heat a frying pan to medium heat and cook bread on each side until golden brown.

7)  Serve warm with your choice of topping.  We sandwiched our french toast around a blueberry compote and cream cheese whipped cream, and topped it with icing sugar.
 

French Toast:

Ingredients:

6 slices of thick, white bread

1/2 cup milk

1 egg

2 tablespoons flour

2 teaspoons white sugar

pinch of salt

sprinkle of cinnamon

1 teaspoon vanilla extract
 


Blueberry Compote:

Directions:

1)  Combine blueberries, water and lemon juice in a medium saucepan.  

2)  Cook over medium heat for about 10 minutes.  Serve warm.

Ingredients:

3 cups blueberries (fresh or frozen)

1/4 cup water

1 tablespoon lemon juice


Cream Cheese Whipped Cream

Directions:

1)  In a large bowl, beat together cream cheese, vanilla extract, salt and icing sugar until well mixed.  Set aside.

2)  In a medium bowl, beat whipping cream until peaks form.

3)  Very gently fold whipping cream into the cream cheese mixture.

4)  Serve!

Ingredients:

4 oz cream cheese (half of one regular package)

1 cup whipping cream

1 teaspoon vanilla extract

pinch of salt

3 tablespoons icing sugar

We topped our french toast off with some icing sugar, and then stuffed our faces!  Now go on and make this for someone special!
